Apple Bread

Group 1: Mix all together
- 1 cup vegetable oil (I typically do all unsweetened applesauce or 1/2 applesauce, 1/2 oil)
- 2 cups sugar
- 3 eggs, well beaten

Group 2: Mix together
- 3 cups whole wheat flour
- 1 tsp salt
- 1 tsp baking soda

Mix Group 1 and Group 2 together.

Chop 2 cups apples (with skin). I usually use 3 good size apples. Mix apples with 2 tsp vanilla extract and 1 cup pecans or walnuts (optional).
Mix apples into dough mixture.
Preheat oven to 350. Grease and flour 2 loaf pans. Split mixture between the two loaf pans. Bake an hour and a half. Remove from pan 20-30 minutes after removal from oven. Let cool on a rack.
